What to Pair with Beets

I grew beets in my garden years ago and loved how fun it was to unearth them.  I’m planning to grow them again this year; however, Hubby is not a huge beet fan, so I want to deliver great recipes and pairings to change his mind.

I checked my trusty reference book and found this tip… Roasted beets and Riesling are great together. Alan Murray, Masa’s Wine Director, San Francisco

I didn’t have a Riesling on hand so I opened an Arrowood Viogner and paired it with this foodandwine.com recipe.  It was a wonderful pairing.

However, the meal also included Tri Tip that did not go with the Viogner.  (I opened a Bogle Old Vine Zin.)  So either serve the beets as its own course with its own wine or make sure your main entree goes with the Riesling or Viogner.

    When I was a small child and in the second grade, I had a teacher who would make me eat pickled beets when they were served in the cafeteria at school. Our school was so large that we had to take our trays back to the classroom to eat and then the teacher would have to approve how much or what you had eaten before you could take the tray back to the lunchroom and go out to play. The first time we had these pickled beets, I didn’t eat them and she wanted to know why. I told her I didn’t like them. She said she would let me get by with it that one time but from then on I would be expected to eat them or have no recess. I used to take these things by the spoon full and throw them all around the room when she wasn’t looking so that I could go out and play. Today, I have no idea if they are good or not because of this teacher. I won’t even try them. :-(

    That’s hysterical! I hated brussel sprouts for years. I finally figured out that I always left them for last so they were cold and there is nothing nastier then bold brussel sprouts!
