Light & Easy Summer Pasta Dinner

If you have the necessary ingredients around, you can make this dinner in 15 minutes.
Garden Herb Linguine
- Linguine for 2 people
- handful of shrimp (shells off)
- 4-5 baby carrots (chopped in half)
- 1 clove garlic
- 3 mini bell peppers (red, yellow or green)
- fresh herbs – oregano, basil & parsley
- EVOO
Fill the pasta pot and veggie steamer with water. Place a garlic bulb and three mini peppers on a broiler pan, cover with EVOO and broil until roasted. When the water boils, put in the pasta and the veggies in their respective pans. Chop the herbs, roasted garlic and peppers. When the pasta is done, take the veggies and the pasta off the stove. Put the pasta in a bowl, add veggies, herbs, garlic and peppers. Mix with 2-3 tbs EVOO to taste.
Serve with a pre-mixed herb salad, mozzarella mini-chunks or balls, sliced strawberries and Trader Joe’s poppyseed dressing.**

*If you have a super-duper pasta pot with a steamer in the top and a colander in the bottom, it makes this dish a breeze. But if you don’t, just boil water in a regular pasta size pot and in a small steamer for the veggies/shrimp.
**Trader Joe’s poppyseed dressing is oil/vinegar based, it is not sweet; you can make your own dressing with a little berry-flavored vinegar, good olive oil and poppyseeds. Or smash some strawberries and add oil & vinegar, salt and pepper.
